We focus on locally sourced ingredients, producers and purveyors, including caviar from Regiis Ova and charcuterie from the Fatted Calf. With these ingredients we craft salads, soups and savory dishes as well as the classic Jambon Beurre, Quiche Lorraine, and Tuna Tartine made with Minerva tuna.
